There are many steps taken to produce a cup of coffee, though we like to consider the processing of the beans to be where the alchemy happens. From the fermentation, pulping, drying, washing, or any combination of them will dictate the flavors in your cup and the all around experience. Different varietals of arabica are chosen when deciding which process suits the beans, bourbon has high sugar content so often selected for natural or honey process, typica is phenomenal washed, catuai can be malolactic fermented to drop the acidity and highlight its true flavors.
