Roast Philosophy

There are many stages to producing a good cup of coffee, but for us the most enjoyable is the roasting. We strive to understand the different varietals of beans which provides us with the knowledge when choosing the correct roast profile that complements. Roasting is a science, from extracting the sugars, the Maillard reaction, removing the greenness and acidity while trying to maintain the natural flavors of the coffee is a true art. We believe in the purest approach of taking high quality coffee, not over roasting it and letting it speak for itself!
